This week we tried a new low fat taco recipe (thanks Leslie!)
Honey Cilantro Shrimp Tacos - 3-5 points per taco*
1 to 1 1/2 pound precooked small shrimp
2 bell peppers sliced (one red one orange)
1 whole onion sliced
3 cloves garlic minced
1/2 jalapeno pepper diced (remove seeds)
2 t cumin
1 t coriander
3 T cilantro
3T honey
Cook peppers, onion, garlic and jalapeno in non-stick cooking spray until just soft (5-10 mins). Add shrimp and seasonings and stir till just warm. Drain off juices. Mix cilantro and honey in separate bowl, set aside. Place shrimp mixture in middle of corn or small flour tortilla top with spoonful of cilantro/honey mixture. Delicious! (You can top with sour cream or salsa if wanted, but just a little, so you can taste the great flavors of this!)
*I figured out that a small corn tortilla is 2 points, and 5-6 shrimp are 2 points. The rest of the taco is zero points assuming that you just put lettuce and salsa on the taco. If you add cheese, sour cream or more shrimp then you just need to add points accordingly.
The tacos were great! I forgot to drain my stuff and it made my tortillas fall apart pretty darn quick. You may want to double up your tortillas or consider this on top of a salad. Also, Chad wasn't in love with the honey part of these tacos but that can easily be remedied by taking out the honey. We found it went great with Trader Joes salsa verde. Sorry I didn't get a chance to snap a pic of this one! ENJOY!
